Ingredients

Main Ingredients

  • 2 large zucchini about 1.5 lbs, cut into fry sticks
  • 1 cup all-purpose flour or almond flour for gluten-free
  • 2 large eggs beaten
  • 1.5 cups panko breadcrumbs
  • 0.5 cup Parmesan cheese grated
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • Cooking spray or olive oil spray

Optional Seasonings

  • 0.25 teaspoon cayenne pepper for heat
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon dried oregano

Instructions

  • Wash, cut into sticks, salt, rest 10 min, pat dry.
  • Flour in first dish, eggs in second, breadcrumbs with cheese and seasonings in third.
  • Dip zucchini in flour, then eggs, then breadcrumb mix; press gently.
  • Preheat air fryer 400°F (200°C). Spray basket. Arrange fries in single layer. Cook 8–10 min, flip halfway, until golden.
