Ingredients

Main Cookie Dough

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg
  • 1 cup unsalted butter softened
  • ¾ cup brown sugar packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoon vanilla extract

Apple Mix-Ins

  • 1 ½ cups apples peeled & finely diced (Granny Smith or Honeycrisp)
  • 1 tablespoon flour for coating apples
  • ½ teaspoon cinnamon

Optional Toppings

  • ½ cup rolled oats
  • ¼ cup cinnamon sugar for sprinkling

Instructions

  • Dice apples into ¼-inch pieces, coat with flour and cinnamon.
  • Beat butter, brown sugar, and granulated sugar until fluffy.
  • Mix in eggs one at a time, then add vanilla.
  • Whisk flour, baking soda, cinnamon, salt, and nutmeg.
  • Add dry ingredients to wet until just combined.
  • Gently fold in prepared apple mixture.
  • Drop rounded tablespoons onto parchment-lined sheets.
  • Bake at 350°F for 10-12 minutes until edges are golden.
  • Rest on baking sheet 5 min, transfer to wire rack.
