Ingredients

For the Chicken

  • 1.5 lbs boneless, skinless chicken breast cut into bite-sized pieces
  • 1 cup all-purpose flour seasoned
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs mixed with paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Vegetable oil for frying

For the Bang Bang Sauce

  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 2 tablespoon sriracha adjust to taste
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar
  • ½ teaspoon garlic powder

For the Bowl

  • 2 cups cooked jasmine rice
  • 1 cucumber diced
  • 1 cup shredded carrots
  • ½ red cabbage thinly sliced
  • ¼ cup green onions chopped
  • 2 tablespoon sesame seeds
  • Fresh cilantro for garnish

Instructions

  • Mix mayo, chili sauce, sriracha, honey, vinegar, and garlic powder. Chill.
  • Dredge chicken in seasoned flour, then egg, then panko. Rest for 5 minutes.
  • Heat oil to 350°F. Fry chicken 3–4 minutes until golden brown and cooked through.
  • Divide rice among bowls, top with crispy chicken, veggies, drizzle with bang bang sauce, and garnish with cilantro.
