Ingredients

For the BBQ Chicken

  • 1.5 lbs boneless skinless chicken breasts
  • ½ cup BBQ sauce divided
  • 2 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • 1 teaspoon salt

For the Sweet Potatoes

  • 3 large sweet potatoes cubed
  • 2 tablespoon olive oil
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • salt and pepper pinch

For the Bowl Assembly

  • 4 cups mixed greens or spinach
  • 1 cup corn kernels fresh or frozen
  • 1 red bell pepper diced
  • ½ red onion thinly sliced
  • 1 avocado sliced
  • ¼ cup cilantro chopped
  • lime wedges for serving

Instructions

  • Cube sweet potatoes; season with olive oil, cumin, chili powder, salt and pepper; roast at 425°F for 25–30 min until golden.
  • Season chicken with olive oil and spices; sear in skillet 6–7 min per side; brush with BBQ sauce; rest and slice.
  • Chop bell pepper, onion, avocado; wash greens; prep corn.
  • Layer greens, roasted potatoes, sliced chicken, veggies, avocado; top with cilantro and lime wedges.
