Ingredients

Beef & Marinade

  • 1 lb sirloin steak or flank steak sliced against the grain
  • 2 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon cornstarch
  • 1 teaspoon sugar
  • 1 tablespoon rice wine or dry sherry

Vegetables & Aromatics

  • 1 large onion sliced
  • 1 bell pepper (red or green) sliced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 2 green onions chopped

Black Pepper Sauce

  • 3 tablespoon soy sauce
  • 2 tablespoon oyster sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch + 2 tablespoon water slurry
  • 1 teaspoon sesame oil
  • 2 tablespoon fresh cracked black peppercorns
  • 2 tablespoon vegetable oil

Instructions

  • Mix soy sauce, oyster sauce, sugar, cornstarch, and rice wine. Add beef, marinate 15 minutes.
  • Prepare onions, peppers, garlic, and ginger.
  • Preheat wok until smoking. Add 1 tablespoon oil.
  • Stir fry beef 2–3 minutes. Remove and set aside.
  • Add vegetables, garlic, ginger, and black pepper. Stir fry 2 minutes.
  • Return beef, add sauce, stir in slurry, cook until thickened.
  • Drizzle sesame oil, garnish with green onions, and serve hot with rice.
