Ingredients

Basic Sandwich

  • 4 large croissants preferably day-old
  • 8 large eggs
  • ½ cup milk whole milk or cream
  • ½ cup cheddar cheese shredded
  • 8 slices bacon thick-cut
  • 2 tablespoon butter
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoon chives chopped

Optional Add-ins

  • 4 oz cream cheese softened
  • 1 medium avocado sliced
  • 4 slices tomato thinly sliced
  • 2 cups spinach fresh leaves
  • 4 slices ham or turkey
  • ¼ cup sun-dried tomatoes chopped
  • 2 tablespoon everything bagel seasoning

Instructions

  • Slice croissants with a serrated knife and toast on a baking sheet until golden brown.
  • Cook bacon in a non-stick skillet until crispy. Drain on paper towels.
  • In a mixing bowl, whisk together eggs, milk, salt, and pepper.
  • Scramble eggs in butter over low heat using a silicone spatula. Stir gently until fluffy. Fold in cheese and chives.
  • Optional: spread cream cheese on the bottom half of each croissant. Layer scrambled eggs, bacon, and desired add-ins.
  • Warm assembled sandwiches in the oven for a few minutes if desired, then serve immediately.
