Ingredients

For the Filling

  • 8 large eggs scrambled
  • 1 pound breakfast sausage cooked and crumbled
  • 1 cup sharp cheddar cheese shredded
  • 0.5 cup cream cheese softened
  • 2 cups frozen hash browns thawed and drained
  • 4 strips bacon cooked and chopped
  • 0.25 cup green onions chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

For Assembly

  • 12 egg roll wrappers
  • 1 egg beaten (for sealing)
  • vegetable oil for frying
  • cooking spray for air fryer

Instructions

  • skillet, medium heat until browned, drain excess fat.
  • in skillet until just set, soft and creamy.
  • combine sausage, eggs, cream cheese, cheddar, hash browns, bacon, green onions, season.
  • place wrapper corner facing you, add ⅓ cup filling center.
  • fold bottom, fold sides, roll tight, brush edge with beaten egg.
  • preheat air fryer 380°F, spray rolls, cook 8–10 min, flip halfway.
  • heat oil 350°F, fry 3–4 min until golden, drain on rack.
