  • Colander
  • Sharp knife and cutting board
  • Measuring cups and spoons
  • Wooden spoon or tongs for stirring

Ingredients

  • 1 lb pasta Penne, fusilli, or orecchiette
  • 2 large heads broccoli about 4 cups florets
  • 4 tablespoons extra virgin olive oil
  • 6 cloves garlic thinly sliced
  • ½ teaspoon red pepper flakes optional
  • ½ cup Parmesan cheese freshly grated
  • Salt and black pepper to taste
  • 1 cup pasta water reserved

Optional Enhancements

  • ½ cup Pine nuts Toasted
  • 1 whole lemon Zest only
  • ¼ cup Basil leaves Torn

Instructions

Prepare Ingredients

  • Bring large pot of salted water to boil
  • Cut broccoli into florets
  • Slice garlic thinly

Cook Pasta & Broccoli

  • Cook pasta according to package directions
  • Add broccoli 3 minutes before pasta is done
  • Reserve 1 cup pasta water
  • Drain pasta and broccoli

Make Sauce

  • Heat olive oil in same pot
  • Sauté garlic and red pepper flakes until fragrant
  • Return pasta and broccoli to pot
  • Add ½ cup pasta water and Parmesan
  • Toss until creamy

Finish

  • Season with salt and pepper
  • Add more pasta water if needed
  • Serve hot with extra Parmesan
