  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 teaspoon Ground cinnamon Optional, but recommended
  • 0.25 teaspoon Ground nutmeg Optional
  • 0.75 cup Unsalted butter Softened
  • 1 cup Brown sugar Light or dark, packed
  • 1 Egg Large
  • 1 teaspoon Vanilla extract Or ½ teaspoon vanilla bean paste
  • 2 tablespoon Milk Whole or 2%
  • 1.5 cups Fresh rhubarb Diced into ¼-inch pieces (thawed & dried if frozen)
  • 0.5 cup Rolled oats Optional, or sub with chopped walnuts/pecans

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment or silicone baking mats.
  • Whisk together flour, baking soda, salt, cinnamon, and nutmeg in a medium bowl.
  • Cream butter and brown sugar in a large bowl until light and fluffy (3–4 min).
  • Beat in egg, vanilla, and milk until combined.
  • Slowly add dry ingredients to wet; mix until just combined.
  • Toss rhubarb with 1 tablespoon flour, then fold into dough with oats (if using).
  • Let dough rest 10–15 minutes.
  • Scoop dough into tablespoon-sized rounds on baking sheets, 2 inches apart.
  • Bake for 12–15 min or until edges are golden and centers just set.
  • Cool on tray 5 minutes, then transfer to wire rack to cool completely.
