Ingredients

  • 0.5 cup unsalted butter melted
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 0.33 cup unsweetened cocoa powder
  • 0.5 cup all-purpose flour
  • 0.25 teaspoon salt
  • 0.25 teaspoon baking powder

Instructions

  • Set oven to 350°F (175°C) and grease mini muffin tin.
  • Mix melted butter and sugar until combined.
  • Beat in eggs one at a time, then vanilla.
  • Sift cocoa, flour, salt, and baking powder in a separate bowl.
  • Gently fold dry mix into wet batter.
  • Stir in chocolate chips or nuts if using.
  • Divide batter evenly into muffin cups, about ⅔ full.
  • Bake 12–15 minutes until tops are set and toothpick comes out with crumbs.
  • Let rest 5 minutes in pan, then transfer to wire rack.
