Ingredients

For the Crust

  • 2 cups graham cracker crumbs
  • ½ cup butter melted
  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon

For the Cheesecake Filling

  • 24 oz cream cheese softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream
  • 2 tablespoon all-purpose flour

For the Apple Layer

  • 3 Granny Smith apples peeled and diced
  • 2 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice

For the Caramel Topping

  • 1 cup granulated sugar
  • 6 tablespoon butter
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt

Instructions

  • Mix graham crumbs, butter, sugar, and cinnamon. Press into lined pan and bake 10 minutes.
  • Whip cream cheese until smooth, add sugar, eggs, vanilla, sour cream, and flour. Spread over crust.
  • Toss diced apples with brown sugar, cinnamon, and lemon juice. Scatter over filling.
  • Bake 35–40 minutes until edges are set and center slightly jiggles. Cool completely.
  • Refrigerate at least 4 hours or overnight for best texture.
  • Melt sugar in saucepan, add butter, cream, vanilla, and salt. Stir until smooth.
  • Drizzle cooled caramel over chilled cheesecake bars before slicing.
