For the Caramel Topping

Instructions
Mix graham crumbs, butter, sugar, and cinnamon. Press into lined pan and bake 10 minutes.
Whip cream cheese until smooth, add sugar, eggs, vanilla, sour cream, and flour. Spread over crust.
Toss diced apples with brown sugar, cinnamon, and lemon juice. Scatter over filling.
Bake 35–40 minutes until edges are set and center slightly jiggles. Cool completely.
Refrigerate at least 4 hours or overnight for best texture.
Melt sugar in saucepan, add butter, cream, vanilla, and salt. Stir until smooth.
Drizzle cooled caramel over chilled cheesecake bars before slicing.
