  • 1.5 lbs boneless skinless chicken breasts or thighs cut into bite-sized pieces
  • 1.5 lbs fresh green beans trimmed and cut into 2-inch pieces
  • 3 tablespoon olive oil divided
  • 1 large onion diced
  • 4 cloves garlic minced
  • 1 teaspoon salt or to taste
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 0.5 teaspoon dried thyme

Instructions

  • Wash green beans; cut chicken; dice onion; mince garlic.
  • Toss chicken with salt, pepper, and paprika.
  • Heat oil; sear chicken until golden; remove and set aside.
  • Add onion; cook until soft; add garlic; stir in green beans.
  • Return chicken; add thyme, broth; cover and cook until beans are tender-crisp.
  • Stir in lemon juice and parsley; rest for 2–3 minutes before serving.
