Ingredients

For Chicken Marinade

  • 2 lbs boneless chicken breast or thighs, cut into chunks
  • 1 cup plain Greek yogurt
  • 2 tablespoon lemon juice
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon salt

For Chicken Butter Sauce

  • 3 tablespoon butter
  • 1 large onion finely chopped
  • 4 cloves garlic minced
  • 1 inch fresh ginger grated
  • 1 tablespoon tomato paste
  • 14 oz crushed tomatoes
  • 1 teaspoon garam masala
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper adjust to taste
  • 1 cup heavy cream room temperature
  • 2 tablespoon cashews soaked 10 minutes
  • 1 teaspoon sugar
  • salt to taste
  • fresh cilantro for garnish

Instructions

  • Mix yogurt, lemon juice, spices, and chicken. Refrigerate 30 minutes–4 hours.
  • Heat butter, cook onions golden brown, add garlic and ginger.
  • Stir in tomato paste, crushed tomatoes, and spices. Simmer 15 minutes.
  • Puree soaked cashews with water, stir into sauce, season with sugar and salt.
  • Sear marinated chicken until golden and cooked through.
  • Add chicken to sauce, pour cream slowly, stir until creamy. Garnish with cilantro.
