Ingredients

For the Chicken

  • 1.5 lbs boneless skinless chicken thighs or breasts bite-sized
  • 2 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 tablespoon cornstarch
  • 1 teaspoon brown sugar
  • ½ teaspoon black pepper

For the Rice & Bowl Base

  • 2 cups jasmine rice or brown rice
  • 3 cups chicken broth or water
  • 1 cucumber diced
  • 2 carrots julienned
  • 1 bell pepper thinly sliced
  • 1 cup edamame shelled
  • 2 green onions chopped
  • 1 avocado sliced

For the Sauce

  • 3 tablespoon soy sauce
  • 2 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon honey
  • 1 clove garlic minced
  • 1 teaspoon sriracha optional
  • 1 tablespoon sesame seeds

Instructions

  • Rinse rice, simmer in broth or water until tender, then fluff with a fork.
  • Mix chicken with soy sauce, sesame oil, garlic, ginger, cornstarch, brown sugar, and pepper. Let marinate 15 minutes.
  • Heat skillet or wok, cook chicken until golden and cooked through.
  • Dice cucumber, julienne carrots, slice bell pepper, steam edamame, chop green onions, and slice avocado.
  • Whisk together soy sauce, rice vinegar, sesame oil, honey, garlic, and optional sriracha. Stir in sesame seeds.
  • Layer rice in bowls, top with chicken, veggies, and drizzle with sauce.
