Ingredients

Main Salad Components

  • 2 cans (15 oz) chickpeas drained and rinsed
  • 2 large ripe avocados diced
  • 6 oz feta cheese crumbled
  • 1 large cucumber diced
  • 2 cups cherry tomatoes halved
  • ½ red onion thinly sliced
  • ¼ cup fresh parsley chopped
  • 2 tablespoon fresh mint chopped

Dressing

  • ¼ cup extra virgin olive oil
  • 2 tablespoon fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 2 cloves garlic minced
  • Salt & black pepper to taste

Instructions

  • Rinse chickpeas, dice cucumber and avocado, halve cherry tomatoes, and slice onion.
  • Whisk olive oil, lemon juice, vinegar, oregano, garlic, salt, and pepper.
  • Combine chickpeas, avocado, cucumber, tomatoes, onion, and feta in a large bowl.
  • Add dressing, toss gently, sprinkle herbs, and let rest 10 minutes before serving.
