Ingredients

Fresh Ingredients

  • 2 pounds fresh figs stems removed and quartered
  • 2-3 Calabrian chilies finely minced (or 1–2 jalapeños for milder heat)
  • 1 large lemon juiced and zested
  • 1 medium red onion finely diced

Pantry Staples

  • 1 cup granulated sugar adjust to taste
  • 2 tablespoon apple cider vinegar
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper freshly ground
  • ¼ teaspoon red pepper flakes optional, for extra heat

Instructions

  • Wash, trim, and quarter figs. Mince chilies, dice onion, juice and zest lemon.
  • Cook onion until soft, add chilies, then figs and sugar. Let sit to release juices.
  • Add vinegar, lemon juice, salt, pepper. Simmer 25–30 minutes until thick.
  • Stir in zest, adjust seasoning, and transfer to sterilized jars. Cool and store.
