Instructions
Wash, trim, and quarter figs. Mince chilies, dice onion, juice and zest lemon.
Cook onion until soft, add chilies, then figs and sugar. Let sit to release juices.
Add vinegar, lemon juice, salt, pepper. Simmer 25–30 minutes until thick.
Stir in zest, adjust seasoning, and transfer to sterilized jars. Cool and store.
