Chocolate Mousse Topping

  • 3 tablespoon Unsalted butter
  • 3 Large eggs separated
  • ¼ cup Granulated sugar divided
  • 1 cup Heavy cream chilled
  • 1 teaspoon Vanilla extract
  • 1 Pinch of salt

Instructions

  • Preheat oven and line baking pan
  • Melt butter and chocolate together
  • Whisk in sugar and eggs
  • Fold in flour, cocoa, and salt
  • Bake until toothpick has moist crumbs
  • Cool brownies completely
  • Melt chocolate and butter for mousse
  • Beat egg yolks with sugar until pale
  • Whip cream with vanilla to soft peaks
  • Beat egg whites with sugar and salt to stiff peaks
  • Fold chocolate mix into yolks
  • Fold in whipped cream
  • Fold in egg whites
  • Spread mousse over cooled brownies
  • Chill until set
