Instructions
Preheat to 300°F (150°C) and line baking sheet with parchment paper.

Beat egg whites until stiff peaks form (3–5 minutes).
Fold whites into yolk mixture in three additions, keeping mixture airy.
Spoon mixture onto parchment-lined sheet into 6–8 rounds.
Bake 25–30 minutes until golden brown.
Rest 5 minutes on tray, then transfer to rack to cool completely.
