  • 2 pounds frozen hash browns thawed
  • 1 pound bacon cooked and crumbled
  • 12 large eggs
  • 1 cup whole milk
  • 16 oz sour cream
  • 2 cups sharp cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded

  • 1 packet ranch dressing mix 1 oz
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • salt to taste
  • black pepper to taste
  • 2 tablespoon fresh chives chopped
  • ¼ cup green onions diced

Instructions

  • Preheat oven to 350°F and grease a 9x13-inch baking dish.
  • Cook bacon until crisp, then crumble and set aside.
  • Layer thawed hash browns in the prepared baking dish. Add bacon, cheeses, and green onions evenly over top.
  • In a large bowl, whisk together eggs, milk, sour cream, ranch mix, garlic powder, onion powder, salt, and pepper.
  • Pour egg mixture evenly over the layered ingredients in the dish.
  • Top with remaining cheese and chives. Cover with aluminum foil and bake for 45 minutes.
  • Uncover and bake an additional 15–20 minutes until golden and center is set.
  • Let rest for 10 minutes before slicing and serving.
