  • Cheese grater for the Parmesan

Ingredients

  • 1 pound 16 oz pasta (penne, fettuccine, or rigatoni)
  • 2 packages 5.2 oz each Boursin cheese (Garlic & Fine Herbs flavor)
  • ½ cup pasta cooking water
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • ½ cup freshly grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Fresh basil or parsley for garnish optional

Instructions

  • Bring a large pot of generously salted water to a rolling boil.
  • Cook pasta according to package instructions until al dente.
  • Reserve ½ cup pasta water before draining.
  • While pasta cooks, heat olive oil in a large skillet over medium heat.
  • Sauté minced garlic for 1-2 minutes until fragrant.
  • Reduce heat to low and add Boursin cheese.
  • Stir continuously as cheese melts, breaking it up with your spoon.
  • Gradually add reserved pasta water until desired sauce consistency is reached.
  • Add drained pasta to the skillet with Boursin sauce.
  • Toss thoroughly to coat pasta.
  • Stir in Parmesan cheese.
  • Season with salt and black pepper to taste.
  • Garnish with fresh herbs if desired.
