Ingredients

  • 1 lb mixed mushrooms cremini, shiitake, oyster, button, or wild mix
  • 3 tablespoon butter divided
  • 2 tablespoon olive oil
  • 3 garlic cloves minced
  • 1 medium shallot finely diced, or substitute with ¼ red onion
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • ½ cup heavy cream or substitute with half-and-half for lighter version
  • 2 tablespoon cream cheese
  • ¼ cup parmesan cheese grated
  • salt and pepper to taste
  • 4 thick bread slices sourdough or bread of choice
  • 2 tablespoon fresh parsley chopped, for garnish
  • red pepper flakes optional, for heat

Instructions

  • Clean and slice mushrooms into varied thicknesses.
  • Toast bread until golden using oven or toaster.
  • Sauté mushrooms in batches in butter and olive oil.
  • Cook shallots, garlic, and thyme with remaining butter.
  • Add cream, cream cheese, and parmesan; stir until smooth.
  • Season to taste and simmer until thickened.
  • Spoon mushroom mixture onto toast and garnish with parsley.
  • Sprinkle red pepper flakes if desired and serve immediately.
