Ingredients

For the Salmon

  • 4 salmon fillets 6 oz each, skin removed
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon garlic powder

For the Sauce

  • 3 tablespoon butter
  • 4 garlic cloves minced
  • 2 shallots finely diced
  • 0.5 cup sun-dried tomatoes chopped
  • 0.25 teaspoon crushed red pepper flakes
  • 0.5 cup chicken broth or white wine
  • 1 cup heavy cream
  • 0.75 cup parmesan cheese freshly grated
  • 2 cups baby spinach fresh
  • 2 tablespoon fresh basil chopped
  • salt and pepper to taste

For the Pasta

  • 12 oz fettuccine or linguine
  • salt for pasta water

Instructions

  • Cook pasta until al dente.
  • Reserve 1 cup pasta water.
  • Season salmon with salt, pepper, Italian seasoning, and garlic powder.
  • Sear salmon until golden and cooked through. Remove and keep warm.
  • Sauté garlic and shallots in butter.
  • Add sun-dried tomatoes and red pepper flakes to the pan and stir to combine.
  • Deglaze pan with chicken broth or white wine.
  • Stir in cream and parmesan until smooth.
  • Wilt in the baby spinach.
  • Add cooked pasta to the sauce and toss well. Add reserved pasta water if needed.
  • Gently fold in the seared salmon pieces.
  • Garnish with chopped basil and serve immediately.
