Ingredients

  • 2 cups cottage cheese full-fat, well-drained
  • ¼ cup Parmesan cheese grated
  • 1 egg white large, lightly beaten
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Optional Seasonings

  • 2 tablespoon everything bagel seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon dried herbs thyme, rosemary, oregano

Instructions

  • Place cottage cheese in a fine mesh strainer lined with paper towels or cheesecloth. Let sit 30 minutes and press to remove moisture.
  • In a bowl, combine drained cottage cheese, egg white, Parmesan, garlic powder, onion powder, salt, pepper, and any optional seasonings.
  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment. Scoop small spoonfuls of mixture, flatten into circles.
  • Bake 15–18 minutes until edges are golden and chips are crisp. Cool 5 minutes on baking sheet, then transfer to wire rack.
