Ingredients

Main Ingredients

  • 4 boneless, skinless chicken breasts about 6 oz each
  • 8–10 fresh figs quartered (or 1 cup dried figs, chopped)
  • 2 tablespoon balsamic vinegar
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 2 tablespoon olive oil
  • 1 tablespoon honey
  • 1 teaspoon fresh rosemary chopped

Seasonings & Finishing Touches

  • salt and black pepper to taste
  • ½ teaspoon dried thyme
  • ¼ cup chicken broth
  • 2 tablespoon butter
  • fresh rosemary sprigs for garnish

Instructions

  • Season with salt and pepper.
  • Cook 5–6 minutes per side until golden.
  • Set aside when cooked through.
  • Sauté onions 2–3 minutes.
  • Stir until fragrant.
  • Combine figs, balsamic, honey, broth.
  • Reduce until thickened.
  • Add back into skillet.
  • Stir in rosemary and thyme.
  • Add butter, coat chicken.
  • Let sit 2–3 minutes before serving.
