Ingredients

Main Ingredients

  • 2 lbs chicken thighs and drumsticks
  • ¼ cup soy sauce
  • ¼ cup tomato sauce
  • 2 tablespoon brown sugar
  • 1 large onion sliced
  • 4 cloves garlic minced
  • 2 bay leaves
  • 1 cup chicken broth
  • 2 tablespoon vegetable oil
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Optional Additions

  • 2 medium potatoes cubed
  • 1 bell pepper sliced
  • 1 tablespoon oyster sauce
  • 2 tablespoon crushed pineapple optional (Grandma’s secret)

Instructions

  • Combine soy sauce, garlic, and sugar. Marinate chicken 15 minutes.
  • Heat oil, brown chicken pieces on all sides. Remove and set aside.
  • Cook onions until soft, add garlic, then pour in marinade, tomato sauce, and broth.
  • Return chicken, add bay leaves, cover, simmer 25–30 minutes.
  • Add potatoes or bell pepper last 15 minutes. Adjust seasoning and serve with rice.
