Ingredients

Main Ingredients

  • 3 lbs chicken thighs and drumsticks skin-on
  • 2 tablespoon olive oil
  • 1 large onion diced
  • 3 carrots cut into chunks
  • 3 celery stalks chopped
  • 8 oz mushrooms sliced
  • 4 cloves garlic minced

Seasonings & Liquids

  • 1 cup dry white wine
  • 2 cups chicken broth
  • 2 tablespoon tomato paste
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 1 tablespoon Dijon mustard
  • Salt and black pepper to taste
  • 2 tablespoon fresh parsley chopped

Optional Additions

  • 1 lb baby potatoes halved
  • ½ cup heavy cream
  • 2 tablespoon flour for thickening

Instructions

  • Pat dry, season with salt & pepper.
  • Heat oil, sear until golden, remove.
  • Onion, carrots, celery, mushrooms until softened.
  • Stir in garlic, tomato paste, cook 2 min.
  • Pour wine, scrape browned bits.
  • Broth, thyme, bay leaves, Dijon.
  • Nestle into pot, bring to simmer.
  • Cover, cook at 350°F for 45–60 min until tender.
  • Let casserole sit covered for 15 min before serving.
