Ingredients

Salad

  • 4 cups Mixed greens Baby arugula is a great option
  • 3 Ripe peaches Sliced into uniform wedges
  • cups Blueberries Washed and patted dry
  • ½ cup Feta cheese Crumbled (use a block if possible)
  • ¼ cup Red onions Thinly sliced, optional
  • cup Toasted pecans Roughly chopped
  • 2 tablespoon Fresh mint leaves Torn, for garnish

Honey Vinaigrette

  • 3 tablespoon Olive oil
  • 2 tablespoon Balsamic vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • Salt & pepper To taste

Instructions

  • Wash and dry all fresh produce thoroughly.
  • Slice peaches into wedges and set aside.
  • Optional: Macerate peaches and blueberries with salt and honey for 15 minutes.
  • In a bowl, whisk vinaigrette ingredients until emulsified.
  • Add greens to a large bowl and toss with half the dressing.
  • Layer peaches, blueberries, feta, onions, and pecans over greens.
  • Drizzle with remaining dressing and garnish with mint.
