Ingredients

Fresh Peach Preparation

  • 4 fresh peaches peeled and diced
  • 2 tablespoon granulated sugar
  • 1 teaspoon lemon juice fresh
  • ½ teaspoon ground cinnamon

Fritter Batter

  • 2 cups all-purpose flour
  • cup granulated sugar
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • cup whole milk room temperature
  • 2 large eggs room temperature
  • 2 tablespoon melted butter slightly cooled
  • 1 teaspoon vanilla extract pure

For Frying & Glaze

  • 6 cups vegetable oil for deep frying
  • 1 cup powdered sugar
  • 3–4 tablespoon milk adjust for desired thickness
  • ½ teaspoon vanilla extract for glaze

Instructions

  • Peel and dice peaches.
  • Macerate peaches with sugar, lemon juice, and cinnamon. Let rest.
  • In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  • In another bowl, whisk milk, eggs, melted butter, and vanilla.
  • Combine wet and dry ingredients to form a batter.
  • Gently fold in the macerated peaches.
  • Heat oil in a heavy-bottomed pot to 375°F using a candy thermometer.
  • Drop batter by spoonfuls or with an ice cream scoop into hot oil.
  • Fry until golden brown, about 2–3 minutes per side.
  • Remove with a slotted spoon and drain on paper towels or wire rack.
  • Whisk powdered sugar, milk, and vanilla until smooth to make the glaze.
  • Drizzle glaze over warm fritters and serve.
