Instructions
Preheat oven to 375°F and grease a 9x13-inch baking dish.
Combine peaches, sugar, cornstarch, vanilla, cinnamon, nutmeg, salt, and lemon juice in a large mixing bowl.
Spread peach mixture evenly into prepared baking dish.
In another bowl, whisk gluten free flour blend, almond flour, granulated sugar, brown sugar, baking powder, and salt.
Cut in cold butter with a pastry cutter until mixture resembles coarse crumbs.
Whisk buttermilk and egg together in a small bowl.
Stir wet ingredients into dry ingredients just until combined; do not overmix.
Drop spoonfuls of batter evenly over peaches.
Bake for 40–45 minutes, until topping is golden and filling is bubbling.
Let cool for 15 minutes before serving.
