Ingredients

Peach Filling

  • 8 cups fresh peaches peeled and sliced (or 6 cups frozen, thawed)
  • ¾ cup granulated sugar
  • 2 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • 1 pinch salt
  • 1 tablespoon lemon juice

Gluten Free Topping

  • 1 ½ cups gluten free flour blend
  • ½ cup almond flour
  • cup granulated sugar
  • 2 tablespoon brown sugar
  • 1 ½ teaspoon baking powder
  • ½ teaspoon salt
  • 6 tablespoon cold butter cubed
  • ½ cup buttermilk
  • 1 large egg

Optional Garnishes

  • vanilla ice cream
  • whipped cream
  • fresh mint leaves

Instructions

  • Preheat oven to 375°F and grease a 9x13-inch baking dish.
  • Combine peaches, sugar, cornstarch, vanilla, cinnamon, nutmeg, salt, and lemon juice in a large mixing bowl.
  • Spread peach mixture evenly into prepared baking dish.
  • In another bowl, whisk gluten free flour blend, almond flour, granulated sugar, brown sugar, baking powder, and salt.
  • Cut in cold butter with a pastry cutter until mixture resembles coarse crumbs.
  • Whisk buttermilk and egg together in a small bowl.
  • Stir wet ingredients into dry ingredients just until combined; do not overmix.
  • Drop spoonfuls of batter evenly over peaches.
  • Bake for 40–45 minutes, until topping is golden and filling is bubbling.
  • Let cool for 15 minutes before serving.
