Ingredients

  • 1.5 cups long-grain white rice Basmati or jasmine
  • 3 cups chicken broth or vegetable broth
  • 0.33 cup fresh lemon juice about 2–3 lemons
  • 2 tablespoon extra virgin olive oil
  • 1 tablespoon lemon zest from fresh lemons
  • 3 cloves garlic minced
  • 1 small onion finely diced
  • 3 tablespoon fresh dill chopped (or 1 tablespoon dried)
  • 2 tablespoon fresh parsley chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 tablespoon butter optional, for richness
  • crumbled feta optional garnish
  • lemon wedges for serving
  • toasted pine nuts optional topping

Instructions

  • Rinse rice and prep ingredients.
  • Sauté onion and garlic in olive oil.
  • Toast rice until lightly golden.
  • Add broth, lemon juice, and seasonings.
  • Simmer covered for 15–18 minutes.
  • Let rest 5 minutes off heat.
  • Fluff rice and stir in fresh herbs.
