Ingredients

the Chicken

  • 4 Boneless, skinless chicken breasts About 6-8 oz each
  • 3 tablespoon extra virgin olive oil
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper Freshly ground

Topping

  • 8 oz fresh mozzarella sliced
  • 2 cups cherry tomatoes halved
  • ½ cup fresh basil leaves
  • ¼ cup pesto
  • 2 tablespoon balsamic glaze
  • Salt and pepper to taste

Instructions

Prepare Chicken

  • Pound chicken to ½ inch thickness
  • Mix olive oil, garlic, Italian seasoning, salt, and pepper
  • Brush mixture on both sides of chicken

Grill

  • Heat grill to medium-high (375°F)
  • Grill chicken 5-6 minutes per side
  • Top with mozzarella slices
  • Close lid and cook 2-3 minutes until cheese melts

Finish

  • Top with halved tomatoes
  • Drizzle with pesto
  • Add fresh basil
  • Finish with balsamic glaze
  • Season with salt and pepper
