Ingredients

For the Huli Huli Marinade

  • 1 cup pineapple juice fresh or canned
  • 0.5 cup soy sauce low sodium optional
  • 0.5 cup brown sugar packed
  • 0.33 cup ketchup
  • 0.25 cup chicken broth
  • 3 tablespoons rice vinegar
  • 4 cloves garlic minced
  • 2 tablespoons ginger freshly grated
  • 1 teaspoon sesame oil

For the Chicken

  • 3 pounds chicken thighs boneless or bone-in
  • 0.25 teaspoon black pepper
  • pineapple slices for grilling, optional
  • green onions chopped, for garnish
  • sesame seeds for topping

Instructions

  • Combine pineapple juice, soy sauce, brown sugar, ketchup, broth, vinegar, garlic, ginger, and sesame oil. Reserve 1 cup for basting.
  • Coat chicken in marinade and refrigerate for at least 4 hours or overnight.
  • Heat to 375–400°F and oil grates to prevent sticking.
  • Cook 6–7 minutes per side, flipping and basting until internal temp reaches 165°F.
  • Let chicken rest 5 minutes, grill pineapple slices, then garnish with green onions and sesame seeds.
