Ingredients

For the Chicken

  • 4 boneless, skinless chicken breasts about 2 pounds
  • 1 fresh pineapple cored and cut into ½-inch rings
  • 2 tablespoon olive oil
  • salt and black pepper to taste

For the Pineapple Marinade

  • 0.5 cup pineapple juice fresh or canned
  • 0.25 cup soy sauce
  • 3 tablespoon brown sugar
  • 2 tablespoon honey
  • 2 garlic cloves minced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoon lime juice
  • 1 teaspoon lime zest
  • 0.5 teaspoon red pepper flakes optional
  • 2 tablespoon fresh cilantro chopped

Instructions

  • Whisk all marinade ingredients and pour over chicken; refrigerate at least 2 hours or overnight.
  • Preheat grill to medium-high; clean and oil grates.
  • Grill chicken 6–7 min per side, basting with reserved marinade.
  • Grill pineapple rings 2–3 min per side until caramelized.
  • Let chicken rest 5 min, then slice and serve with pineapple.
