Ingredients

For the Chicken Shawarma

  • 2 lbs Chicken thighs Or breasts, boneless & skinless
  • 3 tablespoon Olive oil
  • 2 tablespoon Lemon juice Freshly squeezed
  • 3 Garlic cloves Minced
  • 1 tablespoon Cumin Ground
  • 1 tablespoon Paprika Smoked preferred
  • 1 teaspoon Coriander Ground
  • 1 teaspoon Turmeric
  • 1 teaspoon Cinnamon
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Cayenne pepper Optional, for heat

For the Bowls

  • 2 cups Quinoa or rice Cooked; cauliflower rice for low-carb
  • 2 cups Mixed greens Or baby spinach
  • 1 Cucumber Diced
  • 2 Tomatoes Chopped
  • 1 Red onion Thinly sliced
  • 0.5 cup Parsley Fresh, chopped
  • 0.25 cup Mint Fresh, chopped

For the Creamy Garlic Sauce

  • 0.5 cup Greek yogurt Plain
  • 2 tablespoon Tahini
  • 2 Garlic cloves Minced
  • 2 tablespoon Lemon juice Fresh
  • 1 tablespoon Olive oil
  • Salt & pepper To taste

Instructions

  • Mix marinade and coat chicken, refrigerate 30+ minutes.
  • Whisk garlic sauce ingredients, chill until serving.
  • Grill chicken 6–8 min per side until golden and cooked through.
  • Let chicken rest 5 minutes before slicing.
  • Dice veggies and herbs, warm grains if needed.
  • Layer grain, greens, chicken, veggies, herbs, and drizzle sauce.
