  • 3 cloves Garlic Minced
  • ¼ teaspoon Red pepper flakes Adjust to taste
  • ½ cup Low-sodium chicken broth
  • cup Sun-dried tomatoes Chopped, not oil-packed or patted dry
  • cup Greek yogurt 2% or full-fat
  • 3 tablespoon Light cream cheese Softened
  • ¼ cup Grated Parmesan cheese
  • ¼ cup Unsweetened almond milk Or regular milk
  • 2 tablespoon Fresh basil Chopped, plus more for garnish
  • 1 teaspoon Fresh thyme leaves Or ½ teaspoon dried

Instructions

  • Prep and season the chicken breasts
  • Sear chicken in skillet until golden brown
  • Remove chicken and set aside
  • Sauté garlic and red pepper flakes in oil
  • Deglaze with broth and scrape browned bits
  • Simmer sun-dried tomatoes in broth
  • Whisk in yogurt, cream cheese, Parmesan
  • Stir in almond milk, basil, and thyme
  • Return chicken to pan, spoon sauce on top
  • Simmer together to meld flavors
  • Garnish with fresh basil and serve hot
