Ingredients

Soft Cookie Dough

  • 2 cups cake flour sifted
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter room temperature
  • 2 oz cream cheese softened
  • 0.5 cup brown sugar packed
  • 1 large egg
  • 2 tablespoon milk
  • 1 teaspoon vanilla extract

Fig Filling

  • 1 cup dried figs stemmed and chopped
  • 0.5 cup fresh figs chopped, if available
  • 0.33 cup water
  • 2 tablespoon honey
  • 1 tablespoon lemon juice
  • 0.5 teaspoon vanilla extract
  • 1 pinch cinnamon

Instructions

  • Simmer figs, water, honey until soft; add lemon, vanilla, cinnamon. Cool.
  • Cream butter, cream cheese, sugar; add egg, milk, vanilla; mix in dry ingredients.
  • Roll dough, add filling, fold, seal.
  • Refrigerate 30 minutes.
  • Cut cookies, bake at 350°F for 12-15 min until lightly golden.
