Ingredients

  • 5 lbs ripe peaches about 15–20 medium peaches
  • 2 cups brown sugar adjust to taste
  • 2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 1 pinch salt
  • 2 tablespoon honey optional, for added sweetness
  • 0.25 teaspoon almond extract optional, adds depth

Instructions

  • Wash and chop peaches
  • Cook peaches with lemon
  • Add sugar and spices
  • Simmer until thickened
  • Blend mixture smooth
  • Stir in vanilla, add-ins
  • Simmer again briefly
  • Test consistency
  • Jar and store
