Ingredients

  • 3 pounds fresh peaches about 8–10 medium peaches, ripe
  • 2 cups granulated sugar adjust to taste
  • 2 tablespoon lemon juice fresh

Instructions

  • Blanch and peel peaches, remove pits, and chop into small chunks.
  • Combine peaches, sugar, and lemon juice in pot and let sit 10 minutes.
  • Bring to a boil, add butter, and cook over medium-high heat 10–15 minutes.
  • Test for doneness with freezer plate or candy thermometer.
  • Ladle hot jam into sterilized jars and seal or refrigerate.
  • (Optional) Process in boiling water bath for 10 minutes if canning.
