Ingredients

Shortbread Base

  • 1 ½ cups all-purpose flour
  • ½ cup powdered sugar
  • ½ teaspoon salt
  • ¾ cup unsalted butter cold, cubed
  • 2 tablespoon heavy cream

Ice Cream Layer

  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup granulated sugar
  • 6 egg yolks large
  • 2 teaspoon vanilla extract
  • ¼ teaspoon salt

Caramel Layer

  • 1 cup granulated sugar
  • 6 tablespoon unsalted butter
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt

Chocolate Coating

  • 12 oz dark chocolate chopped
  • 3 tablespoon coconut oil

Instructions

  • Mix flour, sugar, salt, and butter. Add cream. Press into baking pan. Bake at 350°F (175°C) for 20–25 minutes. Cool completely.
  • Heat milk, cream, sugar, and salt. Temper yolks, cook custard to 170–175°F. Strain, chill, churn. Spread over shortbread and freeze.
  • Melt sugar, add butter, cream, vanilla, and salt. Cool slightly and pour over frozen ice cream layer. Freeze until firm.
  • Assembly: Layer shortbread, ice cream, and caramel. Freeze thoroughly, then cut into bars.
  • Chocolate Coating: Melt chocolate and coconut oil. Dip frozen bars, allow to set. Freeze until ready to serve.
