Ingredients

Main Ingredients

  • 6–8 chicken thighs bone-in, skin-on (about 3 lbs)
  • cup honey
  • ¼ cup Dijon mustard
  • 3 cloves garlic minced
  • 2 tablespoon olive oil
  • 1 tablespoon fresh thyme or 1 teaspoon dried
  • 1 teaspoon paprika

Seasoning Blend

  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper optional

Optional Garnish

  • Fresh parsley chopped
  • Lemon wedges

Instructions

  • Pat chicken thighs dry and season both sides with salt, pepper, garlic powder, and cayenne. Let rest 15 minutes.
  • In a bowl, whisk together honey, Dijon mustard, garlic, thyme, and paprika. Reserve ¼ of the mixture for serving.
  • Heat olive oil in skillet over medium-high heat. Sear chicken skin-side down for 4–5 minutes, then flip and sear 3–4 minutes.
  • Brush thighs with glaze. Transfer skillet to a 400°F (200°C) oven and bake 20–25 minutes until internal temp reaches 165°F.
  • Broil for 1–2 minutes for added caramelization. Rest 5 minutes, drizzle reserved glaze, and garnish with parsley and lemon.
