Instructions
Pat chicken thighs dry and season both sides with salt, pepper, garlic powder, and cayenne. Let rest 15 minutes.
In a bowl, whisk together honey, Dijon mustard, garlic, thyme, and paprika. Reserve ¼ of the mixture for serving.
Heat olive oil in skillet over medium-high heat. Sear chicken skin-side down for 4–5 minutes, then flip and sear 3–4 minutes.
Brush thighs with glaze. Transfer skillet to a 400°F (200°C) oven and bake 20–25 minutes until internal temp reaches 165°F.
Broil for 1–2 minutes for added caramelization. Rest 5 minutes, drizzle reserved glaze, and garnish with parsley and lemon.
