Ingredients

  • 1 lb boneless chicken thighs cut into bite-sized pieces
  • ½ cup honey preferably raw or pure honey
  • 2 tablespoon hot sauce adjust to taste (like Frank’s or Sriracha)
  • 1 tablespoon soy sauce low sodium if preferred
  • 1 tablespoon apple cider vinegar or lemon juice
  • 2 teaspoon garlic minced
  • 1 tablespoon olive oil for cooking chicken
  • 2 cups cooked rice jasmine or brown rice
  • 2 cups mixed vegetables like broccoli, carrots, or bell pepper
  • salt and pepper to taste
  • red pepper flakes optional, for extra heat

Instructions

  • Toss chicken with salt, pepper, and half of the hot honey mixture.
  • Spread vegetables on a baking sheet, season, and roast at 425°F for 20 minutes.
  • Cook chicken in a hot skillet with oil until golden and cooked through.
  • Pour in remaining hot honey sauce and caramelize for 60–90 seconds.
  • Add rice to bowls, top with veggies and glazed chicken.
  • Garnish with red pepper flakes or sesame seeds if desired.
