Ingredients

For the Apple Base

  • 6 pounds apples mixed: Gala, Granny Smith, Honeycrisp
  • ½ cup water
  • ¼ cup apple cider vinegar

For the Spice Blend

  • 2 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground allspice

For Sweetening (Optional)

  • ½ cup brown sugar adjust to taste
  • 2 tablespoon maple syrup
  • ¼ teaspoon vanilla extract

Instructions

  • Wash, core, and quarter apples; add apples, water, and vinegar to Instant Pot.
  • Cook on high pressure for 20 minutes; natural release 15 minutes.
  • Puree with immersion blender until smooth; stir in spices, sugar, maple, and vanilla.
  • Sauté uncovered 30–45 minutes, stirring, until mixture coats back of spoon.
  • Let cool fully, transfer to jars, refrigerate or can for longer storage.
