Ingredients

the Chicken

  • 4 pounds chicken pieces thighs, breasts, or mix
  • 1 cup chicken broth
  • 1 cup BBQ sauce plus more for serving
  • 1 tablespoon olive oil
  • 2 cloves garlic minced

the Dry Rub

  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon chili powder optional

Instructions

  • Mix dry rub ingredients in a bowl.
  • Pat chicken dry and coat with dry rub.
  • Set Instant Pot to 'Sauté', add oil.
  • Brown chicken in batches, 2-3 minutes per side.
  • Remove chicken, sauté garlic for 30 seconds.
  • Add broth, deglaze pot.
  • Place trivet in pot, arrange chicken on top.
  • Pour ½ cup BBQ sauce over chicken.
  • Pressure cook:
  • Breasts: 8-10 minutes
  • Thighs: 10-12 minutes
  • Natural release 5 minutes, then quick release.
  • Remove chicken, brush with remaining sauce.
  • Optional: Broil 2-3 minutes for caramelization.
