Ingredients

  • 2 pounds Beef chuck roast or sirloin Cut into 1-inch cubes
  • 2 tablespoons Olive oil Divided
  • 1 medium Onion Diced
  • 8 ounces Mushrooms Sliced, optional
  • 3 cloves Garlic Minced
  • 2 cups Beef broth Low-sodium preferred
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Tomato paste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 Bay leaf
  • Salt and pepper To taste
  • 2 tablespoons Cornstarch For thickening
  • 2 tablespoons Cold water For slurry
  • Fresh parsley Optional, for garnish

Instructions

  • Pat beef dry and season with salt and pepper.
  • Sauté beef in Instant Pot until browned.
  • Remove beef and sauté onions and mushrooms.
  • Add garlic and cook briefly.
  • Deglaze pot with broth and scrape bits.
  • Add remaining liquids, herbs, and beef.
  • Pressure cook on High for 15 minutes.
  • Let Instant Pot naturally release for 10 minutes.
  • Open lid and set pot to Sauté mode.
  • Stir in cornstarch slurry and simmer.
  • Taste and adjust seasoning as needed.
  • Garnish with parsley and serve hot.
