Ingredients

Main Ingredients

  • 2 lb russet potatoes peeled & diced (1-inch cubes)
  • 1 lb andouille sausage sliced
  • 1 large yellow onion diced
  • 2 celery stalks chopped
  • 1 bell pepper diced
  • 4 cloves garlic minced

Liquid and Base

  • 4 cups chicken broth low-sodium
  • 1 cup heavy cream
  • ½ cup whole milk

Seasonings and Spices

  • 2 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper
  • 1 bay leaf
  • salt and black pepper to taste

Finishing Touches

  • 2 tablespoon butter
  • 2 green onions chopped
  • ¼ cup fresh parsley chopped

Instructions

  • Turn the Instant Pot to sauté mode. Add sausage and brown for several minutes.
  • Add onion, celery, bell pepper, and garlic. Sauté until vegetables are softened.
  • Add potatoes, chicken broth, Cajun seasoning, paprika, cayenne, bay leaf, salt, and pepper. Scrape up any browned bits from the bottom.
  • Seal the lid and pressure cook on high for 8 minutes. Allow a 10-minute natural pressure release.
  • Use a potato masher to mash some of the potatoes for a creamier texture. Stir in the heavy cream, milk, and butter. Adjust seasoning to taste.
  • Ladle soup into bowls and garnish with chopped green onions and parsley. Serve hot.
