Instructions
Turn the Instant Pot to sauté mode. Add sausage and brown for several minutes.
Add onion, celery, bell pepper, and garlic. Sauté until vegetables are softened.
Add potatoes, chicken broth, Cajun seasoning, paprika, cayenne, bay leaf, salt, and pepper. Scrape up any browned bits from the bottom.
Seal the lid and pressure cook on high for 8 minutes. Allow a 10-minute natural pressure release.
Use a potato masher to mash some of the potatoes for a creamier texture. Stir in the heavy cream, milk, and butter. Adjust seasoning to taste.
Ladle soup into bowls and garnish with chopped green onions and parsley. Serve hot.
