Ingredients

  • 2 pounds Chicken thighs Boneless, skinless, cut into 1-inch pieces

  • 1 large Onion Finely diced
  • 4 cloves Garlic Minced
  • 2 tablespoon Fresh ginger Grated
  • 2 tablespoon Curry powder Yellow curry powder preferred
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Cayenne pepper Adjust to taste
  • 14 oz Coconut milk Full-fat for creamier curry
  • 14 oz Diced tomatoes 1 standard can
  • 1 tablespoon Tomato paste
  • 1 teaspoon Salt Or to taste
  • 2 tablespoon Brown sugar Or honey
  • 1 Red bell pepper Sliced
  • 1 cup Frozen peas
  • Fresh cilantro For garnish
  • Lime wedges For serving
  • 2 cups Basmati rice For serving

Instructions

  • Sauté onions, garlic, and ginger in oil.
  • Toast spices until fragrant.
  • Add chicken and stir to coat in spice mix.
  • Pour in coconut milk, tomatoes, and tomato paste.
  • Stir in salt and brown sugar.
  • Pressure cook on high for 8 minutes.
  • Natural release for 5 min, then quick release.
  • Add bell peppers and peas; sauté for 3–5 mins.
  • Taste, adjust seasoning, garnish, and serve.
  • Let curry rest 5–10 minutes before serving.
