Ingredients

For the Meat Sauce

  • 1 pound ground beef or Italian sausage for extra flavor
  • 1 small onion diced
  • 3 cloves garlic minced
  • 24 oz marinara sauce jarred or homemade
  • 14.5 oz diced tomatoes canned
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon red pepper flakes optional

For the Pasta and Cheese

  • 12 oz pasta penne, rotini, bow tie, or broken lasagna noodles
  • 2 cups water or beef broth for cooking
  • 1 cup ricotta cheese or cottage cheese substitute
  • 2 cups mozzarella cheese divided
  • 0.5 cup Parmesan cheese grated
  • Fresh basil for garnish, optional

Instructions

  • Turn Instant Pot to sauté mode and brown ground beef until no pink remains. Add onion and garlic; cook 2 minutes more. Drain excess fat.
  • Stir in marinara sauce, diced tomatoes, and seasonings. Mix well to combine.
  • Add pasta on top without stirring. Pour water or broth evenly over pasta and press down gently.
  • Close lid and seal valve. Pressure cook on high for 4 minutes. Let release naturally for 5 minutes, then quick release remaining pressure.
  • Stir in ricotta, 1½ cups mozzarella, and Parmesan. Mix until creamy.
  • Optional: Transfer to an oven-safe dish and broil 2–3 minutes for a golden top.
  • Garnish with fresh basil and remaining mozzarella before serving.
