Ingredients

  • 1 lb Penne pasta uncooked
  • 1.5 lbs Boneless, skinless chicken breasts Cut into 1-inch pieces
  • 4 cups Low-sodium chicken broth
  • 2 tablespoons Olive oil
  • 4 cloves Garlic Minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon Black pepper
  • 1 teaspoon Salt

For the Alfredo Sauce:

  • 2 cups Heavy cream
  • 1 cup Parmesan cheese Freshly grated
  • 4 oz Cream cheese Softened
  • 2 tablespoons Butter
  • 1 teaspoon Nutmeg Optional

Instructions

  • Set Instant Pot to “Sauté” mode, add olive oil, and cook chicken with half the salt and pepper until lightly golden (3-4 minutes)
  • Stir in garlic and Italian seasoning, cooking for 30 seconds until fragrant.
  • Pour in penne pasta and chicken broth, ensuring pasta is submerged. Do not stir.
  • Seal the lid, set to High Pressure for 6 minutes, then Quick Release.
  • Stir in heavy cream, cream cheese, butter, and remaining seasoning.
  • Gradually mix in Parmesan, letting the sauce thicken for 2-3 minutes.
