Ingredients

Broth Base

  • 4 cups chicken broth or vegetable broth for vegetarian
  • 2 tablespoon soy sauce or tamari for gluten-free
  • 1 tablespoon miso paste optional but recommended
  • 1 teaspoon sesame oil
  • 1 tablespoon fresh ginger minced
  • 3 cloves garlic minced
  • 1 teaspoon sriracha or chili oil; adjust to taste

Main Ingredients

  • 12 oz ramen noodles fresh or 4 instant packs (no seasoning)
  • 2 cups baby bok choy or spinach/kale
  • 1 cup shiitake mushrooms sliced
  • 2 stalks scallions sliced
  • 4 eggs soft-boiled, halved
  • 1 cup pre-cooked protein chicken, beef, or tofu

Instructions

  • Sauté garlic and ginger in sesame oil
  • Add broth, soy sauce, miso, and whisk
  • Add mushrooms and ramen noodles
  • Pressure cook on high (2–3 minutes)
  • Quick release after 1 minute
  • Stir in bok choy and pre-cooked meat
  • Adjust seasoning and ladle into bowls
  • Top with eggs and scallions
