Ingredients

For the Seasoning Rub

  • 2 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper optional

For the Chicken

  • 1 whole chicken 3–4 pounds
  • 2 tablespoon olive oil or melted butter
  • 1 cup chicken broth
  • 1 lemon cut into wedges
  • 4 cloves garlic smashed
  • 2 bay leaves

Instructions

  • Mix spices, rub chicken with oil and seasoning.
  • Add broth, lemon, garlic, and bay leaves to pot; place trivet.
  • Cook on high pressure 25 min, natural release 15 min.
  • Remove chicken and let rest for 5 minutes before carving.
  • Optional: Broil for 2–3 minutes for crispy skin.
  • Strain and save cooking liquid for soups or sauces.
